A daily drinker Oolong from Taiwan in the Bagua Shan Area. 

This QingXin was hand roasted over charcoal in November 2022.

The brew is at first light yellow, hints of honey comb and sweet potato.

Longer steeps brew a gorgeous sherry gold, and the caramel and french toast come through, not busy or complex but it has a pure and strong clarity of flavour.

Hard to brew bitter and even harder to not enjoy.

Makes for a great Oolong to enjoy together or alone on a rainy (or snowy) day.
Very much a comfort tea.

Gongfu Cha / Gaiwan Method

Water: 100ml ~ 150ml
Leaf amount: 1 ~ 3 teaspoons (2.5 grams to 7.5 grams)

Use lower temp water for lowered astringency, bitterness is not really an issue with this tea.

infusion lengths:
15 ~ 25 sec
35 ~ 45
35 ~ 1 min

This extracts a lot of flavour, but reduces the longevity of the tea, use very short steep instead for sweeter brews.

5 to 10 sec

Teapot Brewing / Grandpa Style

Grandpa Method: Fill a mug with water right off the boil, and toss 2 teaspoons in, wait for leaves to expand and let it cool to taste, then enjoy.

Teapot Method: 1~2 teaspoons ( 2.5 to 5 grams)

3~5 minutes for the first infusion

5+ for the every infusions after.
